Basically starting with the 562v3 specs:

562v2 is as per 562v3 but without the component switching
562v is as per 562v2 but with less s-video inputs (2 I believe), no analogue bypass (it is subject to a ADC->DAC conversion), no DAC for tape out or second zone (you cannot record via analogue a digital only source unless you also setup secondary analogue inputs from the same source) and it is not PC configurable.
