We don't have access to a Nucleus Roon setup, but perhaps I can clarify some things for you. The streamer is generally stereo only, with one exception. There is support for Tidal Atmos when Tidal connect is used.
When you use a HDMI input audio tracks will be decoded if the decoder knows the format. So various Dolby and DTS formats are decoded, both bitstream and PCM. While the HDMI input will typically carry a video signal as well when the processor is used in a Home Cinema setup, it can handle audio only tracks as well, and you can set up a source that has audio only from a HDMI input.
