This is a good write up on how the settings will change the response.

The graph on the link shows how adding capacitance will change the frequency response by adding a peak and changing the high frequency roll off.
If you really want to change the cable between the turntable and phono pre-amp, I’d recommend a cable with as low a capacitance as possible; you’ll be able to add some in with phono pre-amp, but you can’t take it away.
