We don't watch many series as we tend to prefer the single-hit of a film but we've just enjoyed 2 very good series. War & Peace, the 2016 BBC version, followed by 11.22.63, the JFK thing.
Both excellent, I preferred the latter but my better half preferred War & Peace. Very high production qualities with both, picture quality on 11.22.63 was outstanding.
I've just looked into A French Village & it sounds like exactly my sort of thing. What I don't like is when a series goes for years & years; you watch one series then have to wait 12 months to pick it up again. I gave up doing that a while ago so I now wait for them to conclude. Sounds like Series 7 of A French Village is expected to be the last so that would work. I still haven't started on Game Of Thrones for the same reason!

I would recommend:
Sense8 - group of people around the world linked psychically This is probably my new favorite for a streamed series. It's by the same folks that did the Matrix and Babalon 5. The way they use music is pretty cool too. It takes a few episodes to understand what's going on. Also adding Dark Matter - Kind of a Modern Day Star Trek with a few twists.

Slowish FBI / Police procedural guided by David Fincher and a little reminiscent of 'Zodiac' movie based on the writings of the profiler who was involved with ' Silence of the Lambs' movie. Netflix gain is HBO's loss as they broke up with Fincher a few years ago over a budget dispute.

Suburra. Set around a shady real estate acquisition attempt in Rome that would allow the Sicilian Mafia to build port facilities that would handle the expansion of their drug supply into the city, it involves all the usual suspects - the church, local politicians and technocrats, local crime families, old order establishment figures, petty criminals in over their heads - all trying to get a piece of the action or to thwart their rivals.
It's worth paying careful attention in the first episode to who's who and what's going on, but then each subsequent episode falls neatly into place providing the perespective of each of the different characters and a different spin on what it was you thought had been going on previously. Each chapter starts with some dramatic crisis and then rewinds 24 hours to show how thing came to these (usually) unfortunate turn of events.
It would be worth watching even if it were just to show how pretty modern Rome can be made to look. That, as well as the over the top representation of local settled gypsy culture. As always, watch in the original with subs rather than dubbed in order to keep most the flavour of the dialogue.

+1 on Mindhunter and Suburra, both being binge-watched at the moment. The latter is much better in the original Italian and Sinte.
How do you find the bass when the cobble-stones rise during the opening credits of Suburra? It is seriously scary through DSP8000s
BTW, the original film of Suburra is also excellent.

I’ve been watching it on my shiny new Oled rather than in the home theatre where the 8ks dwell. Old 18bit 6ks and 5kc that I’ve had for about 20 years. Still sound great, only with refreshed tweeters a couple of years ago. Bass still scary rumbly if a bit less articulate. Better sounding room though.
I held off on the film lest it gave too much away from the series. I’ll have a go at it eventually.

Just finished Godless on Netflix.
IMHO a remarkable update of the classic Leone western. Superb story with brilliant pacing building to a terrifying climax; no scene is wasted - there is a reason for everything. The excellent 2.35:1 cinematography brings visceral realism to the proceedings, especially the horses. The performances of the whole cast are great but a couple of actors are standouts - watch it and see.
Worth the month's subscription on its own.
