I went to Bristol to listen to the non-upgraded and upgraded 861 and 7200's and I would say imho if it was a choice of the two I would have gone with the 7200 upgrade first. In fact that was the way I was going to proceed. However having had a quick demo at the same time... I upgraded the 7200's for 8000's. and can only say if you can afford/squeeze them in... Go for it, you won't regret it.

I use 8k's with a solid screen and they stand proudly tall next to it. 1. 8k's - just accomodate them, squeeze them in, they will reward you! 2. Then later, get the 861v8 to push everything to current reference.
DSP8000SE, DSP7200SEHC, DSP5200SE sides, DSP7200SE rears, 861v8, 210, Sim2 Ultranero 4, Stewart Cinecurve 2.35:1, XEIT CM-5E Anamorphic lens, Dune HD Duo Cinema 8K and Wireworld Platinum 48G HDMI -> UHD722 -> Shunyata Omega Ethernet. Shunyata/Furutech power-cables/filters. SR Master Fuse@861v8. Uptone Etherregen with 10MHz OCXO clock.
