When Roon release an iPad app (and then if I purchase Roon) can I just use the Roon iPad App as I would the Meridian Sooloos App to my end points the MS600 while utilising the music on my MC200. Or will I still need my PC to be turned on to use it?

In other words if it was just a straight software swap and I can continue to use the my Sooloos system as I have been Roon then would be of interest to me.

You'll need your PC switched on if that is running your Roon server.

I expect more options to come in the not too distant future, allowing you to run Roon on i.e. a NAS.

At this moment you can already run it on i.e. a Mac Mini or an Intel NUC. I have the latter running headless with Roon, works like a charm and is indeed comparable to a Sooloos setup, with the one caveat that Sooloos is very much plug and play, Roon will require installing, setup etc.

This will probably also change in the future, but for now to run it headless you need at least some computer savvyness.

Then Ill pass until it can work just using my MC200 and its iPad app when released.

When the iPad app is released for Roon it is very unlikely that the core will run on the MC200.
