What does it take to convert a UK 240V 861v8 to a US power supply? Is that something I can just send it to Meridian US for, and what does that cost? Is it easy enough to find bits on eBay and do it myself?

Does the same apply for a 110-240V 861v6? Can that get an LPS as easily?

A 240 transformer for a V8 is around $300.00 plus installation. A LPS to upgrade a v6 switch mode power supply is about $1500.00 plus installation. If you are considering a v6 and upgrading to a LPS, I would suggest going ahead and upgrading to V8 as the power supply is about a third of the cost of the upgrade and it is included in the V8 upgrade kit. It is said that these transformers are custom wound for Meridian and are not generally available elsewhere.

What else does a v8 have over a v6?
Can it be done in stages? i.e. do LPS first, then upgrade cards?

The v8 upgrade kit comes with the LPS. It would be more expensive to upgrade in stages. At least one of the cards OE34 is not regularly available by itself.

Apart from the LPS as standard, the SpeakerLink output cards apparently have much lower jitter.

Ok, so if I got a v8 with a 240V power supply, what would it cost to swap the power supply to a 110V?

In the area of 5 to 6 hundred plus shipping.

However, here is the rub, you would need a step up transformer to test it completely at 240v before you changed it to 110v. It wouldn't be the first time that someone has sent a brick in to get the voltage changed. Bad day for all. I keep a 110 to 240v step up transformer for this.

At least with a v6 it is universal voltage so it can be tested before upgrading.
